This week's veggies

The CSA veggies for this week:

• potatoes
• tomatoes
• onions
• cucumbers (4)
• zucchini (3)
• lettuce
• green peppers (3)
• watermelon
  

Which is almost identical to last week's veggies, except there was eggplant instead of zucchini.  Must do something with that before it turns.

Cooking experiment last weekend:  chunky tomato sauce.  This weekend's experiment:  something for potatoes, something I can do in the crock pot, rather than on the stove or in the oven.  And something that will use up some onions and green peppers.

We're really into high summer veggies, aren't we? I got carrots, potatoes, kohlrabi, cauliflower, watermelon and corn last time. This week was onions (2), tomatoes (6, all different kinds), Japanese cucumber, yellow hot pepper, green peppers (2), big bunch of basil, GIANT eggplant, red lettuce, beets, green beans, mushrooms, and organic honey. Nice. But srsly, this eggplant is literally the size of a football. I'm stymied.

That's a huge eggplant! Moussaka? Eggplant parmesan? My grandmom always battered and fried her eggplant, and served sprinkled with salt and pepper, which is what I want to do...but battering and frying seems so unhealthy.

I envy you your beets and green beans.

Thx for the rec on moussaka. Will try that tonight with a brave veggie-loving friend of mine, since Keven's still out of town :)
